The hives for this honey were installed by bee-keeper Joël Tardieu in the village of Leynhac in the Cantal department.

Harvested at the end of June/beginning of July, this honey sports a deep colour, and is characterised by a strong and slightly bitter aroma.

Chef’s advice

This is a type of honey I really like and that I use to create brown caramelised sauces and deglazed sautés.

I used this chestnut honey in the summer dish “Magret de canard, suc de vin de Marcillac et miel de châtaignier” (Duck breast, Marcillac wine and chestnut honey sauce) in June 2018.
