Acacia Honey
Product
This honey is light, sweet and pleasant. It has a clear, amber colour and contains 80 % of pollen from acacia blossom, a tree that is naturally present in the Célé Valley in the Lot region. It is harvested between 20th May and 10th June by Joël Tardieu.
Chef’s advice
For a lovely summer salad, I use this acacia honey to make a vinaigrette, along with sherry vinegar, extra virgin olive oil, lemon zest and grape-seed oil.
